Goosecross Cellars is pleased to release our artisan series 2004 ÆROS Cabernet Sauvignon (AEROS Cabernet Sauvignon and pronounced “Eros” for the winged god Cupid). You now have the opportunity to own one of the most limited-production and sought after wines produced by Goosecross Cellars. “This wine is made especially for our customers who demand the very best and have a passion for collecting and cellaring wine” states David Topper, Goosecross winery Owner and President.

This ÆROS blend is 95% Cabernet Sauvignon, 2.5% Cabernet Franc and 2.5% Petit Verdot. Grapes were hand-selected from the finest lots grown in our Howell Mountain and Yountville Estate vineyards. This Cabernet exemplifies a sensual expression of purpose, form, and passion.
ÆROS 2004 is elegantly fragrant with aromas of black cherry, plum, cedar and spice. Generous layers of boysenberry, tobacco, anise and toasty oak linger on the palate. Absorbing and expressive now, but will continue to develop in the cellar for years to come.
It’s great to showcase a rare wine like this with simple, but elegant food. There’s something to be said for tradition, and pairing ÆROS with a good steak or prime rib of beef is excellent. Or try it with rack of lamb. The richness of the lamb makes a hedonistic partner for the rich complexity of ÆROS.

Abundantly fragrant with distinctive and intense fruit. Loaded with spicy pineapple, rich guava, creamy vanilla, and crisp citrus. The lingering signature finish is the mark of several months of aging sur lies. Our Chardonnay ripened slowly in the cool, Carneros fog, intensifying the fruit and lending it our signature crisp finish. Geoff fermented about 40% of the wine in barrels for fullness and complexity, and the balance at low temperatures in stainless steel for purity of fruit. By bringing the two together he created one wine that’s both opulent and lively. Bright and nicely focused.

While most of the fruit is from prestigious Howell Mountain, this vintage also marks the debut of a small amount of Petit Verdot and Cabernet Franc from our Yountville Estate vineyard, which we re- planted a few years ago. Our steep Howell Mountain site produces extremely small grapes of tremendous flavor concentration and “…the young Petit Verdot and Cabernet Franc vines bring some brightness and elegance to all of that intensity,” remarks Geoff Gorsuch, our Winemaker.
To maximize the richness of flavor, Geoff allowed the skins and seeds some time to “cold soak” before guiding the wine through a warm, but not hot, fermentation. He followed up with an early pressing for polished tannins and a graceful finish. Geoff aged the ÆROS (pronounced “Eros” for the winged god “Cupid”) in his favorite Bordeaux-made San Martin and Quintessence barrels to ensure its signature complexity and finesse.

69% Napa Sangiovese and 31% Napa Cabernet Sauvignon resulted in a wine with generously seductive concentrated flavors. Perfumed with sweet dried cherry, plum and anise, the wine is full and lush on the palate with soft, chewy tannins and lingering toast and spice.

As always our Merlot is fruit forward and lush on the palate. The vineyard is a little south of the winery on the east side of the valley where the afternoon sun brings out aromas of ripe cherry and raspberry. Elegant and richly textured with flavors of juicy blackberry, vanilla and clove, the wine finishes with subtle, toasty oak and soft, supple tannins.
